🌮 Mexican Beef Enchiladas

Filling
- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced

1️⃣ Make the Filling
Cook ground beef and onion in a skillet over medium heat until browned.
Drain excess grease.

2️⃣ Prepare the Tortillas
For corn tortillas (traditional method):

- Spread a thin layer of enchilada sauce in a 9×13 dish.
- Spoon beef mixture into each tortilla.
- Roll tightly and place seam-side down.
- Pour remaining sauce over top.

4️⃣ Bake
Bake at 375°F (190°C) for 20–25 minutes until bubbly and cheese is melted.
