🧾 Ingredients

1 kg medium Yukon Gold or baby potatoes (any thin-skin potato works)

3 tbsp olive oil

3–4 garlic cloves, minced

1 tsp paprika

½ tsp dried oregano or thyme

2 tbsp melted butter

🔪 Step 1: Prep the Potatoes

Preheat oven to 220°C (425°F).

Wash and dry potatoes.

Place each potato on a cutting board and make thin crosshatch cuts on the top (don’t cut all the way through).
