Add pineapple, jalapeños, onion, garlic, vinegar, sugar, salt, and ginger to a small saucepan.

Cook over medium-low heat for 15–20 minutes, stirring occasionally, until thickened and glossy.
3️⃣ Finish
Remove from heat and stir in lime juice.
Cool completely — it thickens more as it cools.
4️⃣ Store
