One-Pan Ranch Chicken, Carrots & Potatoes
Ingredients

4 chicken breasts or thighs

1 lb baby potatoes, halved (or regular potatoes, chopped)

3–4 carrots, sliced into chunks

3 tbsp olive oil or melted butter

1 packet ranch seasoning mix

1 tsp garlic powder (optional but good)

½ tsp paprika or black pepper (optional)
Instructions

Preheat oven to 400°F (205°C).

Prep veggies
Toss potatoes and carrots with 2 tbsp oil and half the ranch seasoning. -
Season chicken
Rub chicken with remaining oil and seasoning. -
Assemble
Spread veggies on a baking sheet. Place chicken on top. -
Bake
Bake 35–40 minutes, flipping chicken halfway, until chicken is cooked through (165°F) and veggies are tender. -
Optional finish
Broil 2–3 minutes for crispy edges.
