Pecan Pie Filling
Ingredients

1 cup light corn syrup (or dark for deeper flavor)

¾ cup brown sugar (packed)

3 large eggs

¼ cup melted butter (slightly cooled)

1 tsp vanilla extract

¼ tsp salt

2 cups pecan halves
Instructions

In a bowl, whisk corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until smooth.

Stir in pecans.

Pour filling into an unbaked 9-inch pie crust.

Bake at 350°F (175°C) for 50–60 minutes, until the center is just set (slight jiggle).

Cool completely before slicing (filling sets as it cools).
Tips & Variations

No corn syrup: Use maple syrup, golden syrup, or honey (texture will be slightly softer).

Extra richness: Add 1 tbsp heavy cream or bourbon.

Chocolate pecan pie: Sprinkle ½ cup chocolate chips into the crust before adding filling.

Less sweet: Reduce syrup to ¾ cup and increase pecans slightly.
