Peanut Butter Balls
Ingredients

1 cup creamy peanut butter

½ cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

2 cups chocolate chips (milk, semi-sweet, or dark)

1–2 Tbsp coconut oil or shortening (optional, for smoother chocolate)
Instructions

Make the filling:
In a bowl, mix peanut butter, butter, powdered sugar, and vanilla until smooth and thick. -
Form balls:
Roll mixture into 1-inch balls and place on a baking sheet lined with parchment paper. -
Chill:
Refrigerate for 20–30 minutes until firm. -
Melt chocolate:
Melt chocolate chips (and coconut oil if using) in the microwave in 20–30 second intervals, stirring until smooth. -
Dip:
Dip each ball into melted chocolate using a fork. Let excess drip off, then return to the parchment paper. -
Set:
Refrigerate until chocolate is firm (about 15–20 minutes).
