🍽 One-Pan Garlic Herb Chicken with Potatoes & Green Beans
Ingredients

4 chicken thighs or breasts (boneless or bone-in)

1 lb baby potatoes, halved

2 cups fresh green beans, trimmed

3 tbsp olive oil
-
4 cloves garlic, minced
-
1 tsp dried oregano
-
1 tsp dried thyme
-
1 tsp paprika
-
Salt & pepper to taste

Optional: lemon wedges or juice
Instructions

Preheat oven to 400°F (205°C). Line a baking sheet with foil or parchment.

Season potatoes

Toss potatoes with 1½ tbsp olive oil, half the garlic, salt, and pepper.

Spread on the pan and bake 15 minutes first (they need a head start).

Season chicken

In a bowl, mix remaining olive oil, garlic, oregano, thyme, paprika, salt, and pepper.

Rub all over the chicken.

Add to pan

Remove pan from oven. Push potatoes to the side.

Add chicken and green beans (toss green beans lightly with oil and salt).

Bake

Return to oven and bake 25–30 minutes, until chicken is cooked through and potatoes are tender.

For extra browning, broil 2–3 minutes at the end.

Finish & serve

Squeeze fresh lemon juice over everything if desired.
