🥦 Easy Mixed Vegetable Stir-Fry
🛒 Ingredients

2 cups mixed vegetables (carrots, bell peppers, broccoli, green beans, peas, zucchini, etc.)

1 small onion, sliced

2 cloves garlic, minced

2 tbsp oil (olive or vegetable oil)

2 tbsp soy sauce
-
1 tsp ginger (grated or powder)

½ tsp black pepper
-
Salt to taste

Optional: chili flakes or a splash of lemon juice
👩🍳 Instructions

Heat oil in a pan or wok over medium heat.

Sauté onion and garlic until fragrant (about 1–2 minutes).

Add harder vegetables first (carrots, beans, broccoli) and cook for 3–4 minutes.

Add softer vegetables (bell peppers, zucchini, peas). Stir-fry for another 3–4 minutes.

Add soy sauce, ginger, black pepper, and salt. Mix well.

Cook until vegetables are tender but still slightly crisp.

Finish with lemon juice or chili flakes if desired.
