Mix and press into an 8×8 pan. Chill 15 minutes.
Cream Cheese Layer

Beat cream cheese + sweetener until smooth. Whip cream separately, then fold together. Spread over crust. Chill 15–20 min.
Lemon Layer

½ cup fresh lemon juice

2 tbsp lemon zest

½ cup powdered sweetener (to taste)

1 cup heavy whipping cream

2 tsp unflavored gelatin + 3 tbsp water
Bloom gelatin in water 5 min. Gently warm lemon juice + sweetener, dissolve gelatin, cool slightly. Whip cream and fold into lemon mixture. Spread over cream layer.
