1. Roast the sweet potatoes
Preheat oven to 425°F (220°C).
Toss sweet potatoes with olive oil, salt, pepper, oregano, garlic powder, and chili flakes.
Roast 25–30 min, flipping once, until caramelized and tender.
2. Whip the ricotta
Blend ricotta, olive oil, lemon zest, and salt until smooth and fluffy.
Chill—it gets even better.
3. Make the hot honey
Warm honey gently with chili flakes (don’t boil).
Stir in vinegar. Set aside.
4. Cook the beef
Brown beef in a hot skillet with olive oil.
Add garlic, fennel, basil, thyme, paprika, salt, and pepper.
Splash in wine or balsamic; let it reduce slightly.
