🍲 Hungarian Turkey Vegetable Soup
Ingredients (Serves 4–6)

1–1½ lb (450–700 g) turkey breast or turkey thigh, cut into bite‑sized pieces

2 tbsp butter or oil

1 medium onion, finely chopped

2 cloves garlic, minced

2 large carrots, sliced

2 celery stalks, sliced

2 medium potatoes, diced
-
1 green bell pepper, chopped

1 tsp Hungarian sweet paprika (or regular paprika)

1 bay leaf

6 cups turkey or chicken broth

1–2 tbsp tomato paste (optional, for depth)

Salt and freshly ground black pepper, to taste

Fresh parsley for garnish
Instructions
1. Sauté the Base

Heat the butter or oil in a large soup pot over medium heat.

Add chopped onion and sauté until soft and translucent (about 3–4 minutes).

Add minced garlic and sauté 30 seconds more.
2. Add Turkey and Spices

Add turkey pieces to the pot and cook until lightly browned.

Sprinkle in the paprika and bay leaf, stirring to coat the meat.

3. Add Vegetables

Add carrots, celery, potatoes, and bell pepper.

Stir to combine and let cook a couple of minutes.
4. Add Broth and Simmer
