Homemade Christmas Jam
Ingredients

12 oz (340 g) fresh or frozen cranberries

1 lb (450 g) strawberries, hulled and chopped

Zest of 1 orange

Juice of 1 orange (about ½ cup)

3 cups sugar
-
1 tsp cinnamon
-
¼ tsp ground cloves (or allspice)

1 packet (1.75 oz / 49 g) powdered fruit pectin
-
½ tsp butter (reduces foaming)
Instructions

Prep the fruit
Add cranberries, strawberries, orange zest, and orange juice to a large pot. -
Cook
Bring to a boil over medium-high heat, stirring often. Cook 10–15 minutes until cranberries burst and fruit softens. -
Blend (optional)
For a smoother jam, use an immersion blender or mash with a potato masher. -
Add pectin & spices
Stir in pectin, cinnamon, cloves, and butter. Bring to a full rolling boil for 1 minute. -
Add sugar
Stir in sugar and return to a rolling boil. Boil hard for 1 full minute, stirring constantly. -
Test & jar
Remove from heat. Skim foam if needed. Ladle into sterilized jars, leaving ¼-inch headspace. -
Seal
Process in a boiling water bath for 10 minutes or cool and refrigerate for immediate use.
Storage

Refrigerator: up to 3 weeks

Freezer: up to 1 year

Canned: up to 12 months (properly sealed)
Variations

Spiced: add a pinch of nutmeg or ginger

No pectin: simmer longer until thick (about 30–40 minutes total)

Low sugar: use low-sugar pectin and adjust sugar
