Here’s a Grilled Salmon with Greek Salsa that’s quick enough for a weeknight but fancy enough to show off.
Grilled Salmon with Greek Salsa
Ingredients (serves 4)
Salmon

4 salmon fillets (6 oz / 170 g each)

2 tbsp olive oil

1 tsp dried oregano
-
½ tsp smoked paprika
-
Salt & black pepper

Lemon wedges
Greek Salsa

1 cup cherry tomatoes, finely chopped
-
½ cup cucumber, seeded & diced
-
¼ cup red onion, very finely chopped
-
¼ cup Kalamata olives, chopped
-
2 tbsp fresh parsley or dill, chopped
-
1–2 tbsp extra virgin olive oil
-
1 tbsp red wine vinegar or lemon juice
-
Optional: 2 tbsp crumbled feta
Instructions
1️⃣ Make the Greek salsa
Mix tomatoes, cucumber, onion, olives, herbs, olive oil, and vinegar/lemon juice.
Taste and adjust salt. Chill while you grill.
2️⃣ Prep the salmon
Pat salmon dry. Brush with olive oil.
Season with oregano, paprika, salt, and pepper.
3️⃣ Grill

Preheat grill to medium-high

Lightly oil grates

Grill salmon skin-side down for 4–5 minutes

Flip carefully and grill another 2–3 minutes
Salmon should flake easily but stay juicy.
(No grill? A hot grill pan works great.)
4️⃣ Serve
Top hot salmon with generous spoonfuls of Greek salsa.
Finish with lemon juice and a drizzle of olive oil.
