French Onion Chicken Bake

Ingredients

4 boneless, skinless chicken breasts (or thighs)

1 packet French onion soup mix

1 cup beef broth
-
1 large onion, thinly sliced

1 tbsp butter or olive oil

1 cup shredded mozzarella, Swiss, or Gruyère cheese

Salt & pepper (light—soup mix is salty)
Instructions

Preheat oven to 375°F (190°C).

Heat butter/oil in a skillet and caramelize onions over medium heat, about 10 minutes.

Place chicken in a greased baking dish; season lightly with pepper.

Sprinkle French onion soup mix over chicken.

Top with caramelized onions and pour beef broth around (not directly over) the chicken.

Cover with foil and bake 25 minutes.

Uncover, add cheese, and bake 10–15 minutes more until bubbly and chicken reaches 165°F.

Broil 1–2 minutes if you want a golden top.
