🍝🥔 Fideo with Potatoes & Ground Beef

Ingredients
Fideo & Meat

200 g (7 oz) fideo pasta (thin vermicelli)

1 lb (450 g) ground beef

2 tbsp olive oil
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
2 medium potatoes, peeled & diced

1–2 tomatoes, finely chopped or ½ cup tomato puree

2 cups beef or chicken broth (or water with bouillon)

1 tsp ground cumin
-
½ tsp paprika (optional)

Salt & black pepper to taste

1–2 tbsp chopped cilantro (optional garnish)
Instructions

Brown the beef:
In a large skillet or saucepan, heat olive oil over medium heat. Add onion and garlic; sauté until translucent. Add ground beef, season with salt, pepper, cumin, paprika, and cook until browned. -
Cook the potatoes:
Add diced potatoes and sauté 3–4 minutes until slightly golden. -
Toast the fideo:
Push beef & potatoes to the side or remove briefly. In the same skillet, add fideo pasta and toast for 2–3 minutes until lightly golden (this gives a nutty flavor). -
Add tomato & broth:
Mix in tomatoes or tomato puree. Pour in broth, stir everything together, and bring to a boil. -
Simmer:
Reduce heat to low, cover, and simmer 10–12 minutes or until noodles and potatoes are tender. Stir occasionally to prevent sticking. -
Finish & serve:
Taste and adjust seasoning. Sprinkle with fresh cilantro before serving. Optional: squeeze lime for a fresh zing.
