🌿🧀 Enchiladas Suizas
Enchiladas Suizas (“Swiss-style enchiladas”) are creamy, cheesy enchiladas baked in a rich green sauce. The “Swiss” name comes from the generous use of dairy—cream and melted cheese.
Ingredients (Serves 4–6)
For the filling:

3 cups shredded cooked chicken (rotisserie works great)

½ cup diced onion

Salt to taste
For the green sauce:

1 lb tomatillos, husked and rinsed

1–2 jalapeños (seeded for less heat)

1 garlic clove

½ cup chopped cilantro
-
½ cup Mexican crema or sour cream

½ cup heavy cream
-
Salt to taste
For assembly:

8–10 corn tortillas

2 cups shredded Oaxaca, Monterey Jack, or mozzarella cheese

Oil for lightly frying tortillas
🔥 Instructions
1️⃣ Make the Green Sauce

Boil tomatillos and jalapeños for 8–10 minutes until soft.

Drain and blend with garlic, cilantro, and salt until smooth.

Pour into a saucepan and simmer 5 minutes.

Stir in crema and heavy cream. Keep warm.
2️⃣ Prepare Tortillas

Lightly fry tortillas in a bit of oil (10–15 seconds per side) to make them pliable.

Drain on paper towels.
3️⃣ Fill & Roll

Mix shredded chicken with diced onion and a spoonful of sauce.

Spoon filling into tortillas, roll tightly, and place seam-side down in a greased baking dish.
4️⃣ Sauce & Cheese

Pour the creamy green sauce generously over the enchiladas.

Cover completely with shredded cheese.
5️⃣ Bake

Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden.

Broil 2–3 minutes for lightly browned cheese on top.
