Ingredients (1–2 sandwiches)

4 hard-boiled eggs, peeled

Instructions

Chop eggs
Finely chop the hard-boiled eggs and place in a bowl. -
Mix salad
Add mayonnaise, mustard, salt, pepper, and any optional extras.
Stir gently until creamy. -
Assemble sandwich
Spread egg salad on one slice of bread.
Top with lettuce or tomato if using, then the second slice. -
Serve
Cut in half and enjoy immediately, or chill for 10–15 minutes for firmer egg salad.
