🍞 Easy Gluten-Free Artisan Bread (No Kneading)
Crispy outside, soft inside, very forgiving.
Ingredients

3 cups gluten-free all-purpose flour with xanthan gum

1½ tsp salt

1 tbsp sugar or honey

2¼ tsp instant yeast (1 packet)

1½ cups warm water (about 105–110°F)

2 tbsp olive oil or melted butter

Optional but nice: 1 tsp apple cider vinegar (improves texture)
Instructions

Mix dry ingredients in a large bowl.

Add wet ingredients and stir until you get a thick, sticky batter (more like very thick cake batter than dough).

Cover and let rise in a warm spot for 45–60 minutes, until slightly puffed.

Preheat oven to 425°F (220°C).
Place a Dutch oven with lid inside to heat (or use a heavy oven-safe pot). -
Transfer dough (scrape it out—don’t shape much) onto parchment paper.

Lower into hot Dutch oven, cover with lid.

Bake 30 minutes covered, then remove lid and bake 10–15 minutes more until deeply golden.

Cool at least 20 minutes before slicing (important for structure).
✨ Tips for Best Results

If your flour blend doesn’t include xanthan gum, add 1 tsp.

Dough too thick? Add 1–2 tbsp water. Too loose? Sprinkle in a little flour.

For a crackly crust: mist the dough with water before baking or toss a few ice cubes into the oven (not the pot).
