Ingredients

1 small head of cabbage, chopped

1 onion, diced

2 carrots, sliced

2 celery stalks, sliced

3–4 garlic cloves, minced

1 can (14 oz) diced tomatoes

4 cups vegetable or chicken broth

1 tsp paprika (optional)

1 tsp dried thyme or Italian herbs

Salt and pepper, to taste

2 tbsp olive oil
Instructions

Sauté vegetables:
In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook 5 minutes until softened. Add garlic and cook 1 more minute. -
Add cabbage & spices:
Stir in cabbage, paprika, thyme, salt, and pepper. Cook 2–3 minutes. -
Add liquid & simmer:
Pour in broth and diced tomatoes (with juice). Bring to a boil, then reduce heat and simmer 20–25 minutes, until cabbage is tender. -
Adjust seasoning:
Taste and add more salt, pepper, or herbs as needed. -
Serve:
Enjoy warm with crusty bread, a sprinkle of fresh herbs, or a dollop of sour cream.
