Ingredients
- 1 lb large shrimp, peeled and deveined
- Salt & black pepper, to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1–2 cups fresh spinach
Instructions
- Season shrimp with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear shrimp 1–2 minutes per side until just pink. Remove and set aside.
- In the same skillet, melt butter. Add garlic and cook 30 seconds.
- Stir in sun-dried tomatoes, cream, broth, Parmesan, and Italian seasoning.
- Simmer 5–7 minutes until sauce thickens slightly.
- Add spinach and stir until wilted.
- Return shrimp to skillet and cook 2–3 minutes until heated through.
