Cottage Pie
Ingredients
Meat Filling
- 1 lb ground beef or lamb
- 1 medium onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas (optional)
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- Salt & black pepper, to taste
- 1–2 tbsp flour (optional, to thicken)
Mashed Potato Topping
- 2 lbs potatoes, peeled and cubed
- ¼ cup butter
- ½ cup milk (more if needed)
- Salt & black pepper, to taste
- Optional: ¼ cup shredded cheddar cheese
Instructions
1. Make Mashed Potatoes
- Boil potatoes until tender, about 15–20 minutes.
- Drain and mash with butter, milk, salt, and pepper. Set aside.
2. Make Meat Filling
- Preheat oven to 400°F (200°C).
- In a large skillet, brown ground beef until fully cooked. Drain excess fat.
- Add onion, carrot, and garlic. Sauté until softened.
- Stir in tomato paste, Worcestershire sauce, thyme, salt, pepper, and flour (if using).
- Pour in beef broth and simmer 5–10 minutes until thickened.
- Stir in peas (if using).
3. Assemble Pie
- Transfer meat mixture to a baking dish.
- Spread mashed potatoes evenly over the top.
- Optional: Sprinkle cheddar cheese on top.
- Bake 20–25 minutes, until the top is golden and edges are bubbling.
Tips & Variations
- Use leftover roast beef or lamb instead of ground meat.
- Add a splash of cream or mustard to mashed potatoes for extra flavor.
- Swap cheddar for Parmesan for a sharper topping.
- For a quicker version, cook entirely on the stovetop and broil the top for a few minutes.
