Ingredients
For the beef & marinade

1 lb flank steak or skirt steak

Juice of 1 lime

For the fajitas

2 bell peppers (any colors), sliced

1 medium onion, sliced

Flour or corn tortillas (warmed)

Instructions

Marinate the beef:
Mix olive oil, lime juice, garlic, and spices. Coat the steak and marinate 20–30 minutes (or up to 2 hours). -
Cook the beef:
Heat a large pan or skillet over medium-high heat. Cook steak 3–5 minutes per side until nicely browned. Remove and rest for 5 minutes. -
Cook peppers & onions:
In the same pan, add olive oil, bell peppers, and onion. Cook 5–7 minutes until soft with a little char. -
Slice the beef:
Cut steak thinly against the grain. -
Combine:
Add sliced beef back to the pan with the veggies. Toss together for 1–2 minutes. -
Serve:
Spoon into warm tortillas and add your favorite toppings.
