🍥 Soft Homemade Cinnamon Rolls (12 rolls)
Ingredients
Dough

¾ cup warm milk (about 110°F / warm, not hot)

2¼ tsp active dry yeast (1 packet)

¼ cup granulated sugar

1 egg + 1 egg yolk (room temp)

¼ cup melted butter

3 cups all-purpose flour

¾ tsp salt
Filling
-
⅔ cup brown sugar
-
1½ tbsp ground cinnamon
-
¼ cup softened butter
Cream Cheese Icing
-
4 oz cream cheese (softened)
-
3 tbsp butter (softened)
-
¾–1 cup powdered sugar
-
½ tsp vanilla extract
-
Pinch of salt
Instructions

Activate yeast
Mix warm milk, yeast, and 1 tbsp sugar. Let sit 5–10 min until foamy. -
Make the dough
Add remaining sugar, egg, yolk, melted butter, salt, and flour.
Mix until a soft dough forms. Knead 5–7 min (or 3–4 min with mixer) until smooth and elastic. -
First rise
Place dough in a lightly oiled bowl, cover, and let rise 1–1½ hours until doubled. -
Roll it out
Roll dough into a 14×9 inch rectangle. -
Fill
Spread softened butter over dough. Mix brown sugar + cinnamon and sprinkle evenly. -
Roll & cut
Roll tightly from the long side. Cut into 12 rolls (unflavored floss = clean cuts!). -
Second rise
Place in greased 9×13 pan. Cover and rise 30–45 min until puffy. -
Bake
Bake at 350°F (175°C) for 20–25 min, until lightly golden. -
Icing
Beat all icing ingredients until smooth. Spread over warm rolls. 😍

For extra gooey rolls, pour ¼ cup warm heavy cream over rolls before baking.

Want overnight rolls? Refrigerate after shaping, then rise 45 min before baking.
