Ingredients
- 1 cup mixed nuts (almonds, walnuts, cashews, pecans), roughly chopped
- 1 cup rolled oats
- ½ cup honey or maple syrup
- ¼ cup unsalted butter or coconut oil
- ½ tsp vanilla extract
- ¼ tsp salt
- ½ cup dark chocolate chips or chunks
- Optional: 2 tbsp unsweetened cocoa powder for extra chocolatey flavor
Instructions
- Prep pan:
Line an 8×8-inch baking pan with parchment paper. - Toast oats & nuts (optional but flavorful):
In a dry skillet, lightly toast oats and nuts over medium heat for 3–5 minutes. - Make syrup:
In a small saucepan, heat honey (or maple syrup) and butter/coconut oil over low heat until melted and combined. Stir in vanilla and salt. - Combine ingredients:
