Cheesy Ground Beef and Rice Casserole

Ingredients

1 lb (450 g) ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup uncooked long-grain white rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes, drained

1 tsp paprika

½ tsp dried oregano

Salt and pepper, to taste

1½ cups shredded cheddar cheese (divided)

2 tbsp olive oil or butter

Optional: 1 cup frozen peas or corn
Instructions

Preheat oven
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish. -
Cook beef & aromatics
In a skillet, heat oil over medium heat.
Add onion and garlic; sauté until softened.
Add ground beef and cook until browned. Drain excess fat. -
Combine casserole ingredients
Stir in rice, beef broth, diced tomatoes, paprika, oregano, salt, pepper, and optional veggies. Mix until well combined. -
Assemble in baking dish
Transfer mixture to the prepared baking dish.
Sprinkle 1 cup of shredded cheddar on top. -
Bake
Cover with foil and bake 30 minutes.
Remove foil, sprinkle remaining ½ cup cheddar, and bake 5–10 more minutes, until cheese is melted and bubbly. -
Serve
Let rest 5 minutes before serving. Garnish with fresh parsley if desired.
