1 medium head cauliflower (or 4 cups riced cauliflower)

1 cup shredded cheese (cheddar or mozzarella)

½ cup breadcrumbs or panko

1 egg

½ tsp salt

½ tsp black pepper

½ tsp garlic powder

½ tsp onion powder

Optional: 1 Tbsp grated Parmesan
Instructions

Prep cauliflower:
Chop cauliflower and steam or microwave until very tender (about 5–7 minutes).
Let cool, then squeeze out as much moisture as possible using a clean towel. -
Mix:
In a bowl, combine cauliflower, cheese, breadcrumbs, egg, seasonings, and Parmesan. -
Shape:
Roll into small tot shapes and place on a parchment-lined baking sheet. -
Bake:
Bake at 400°F (205°C) for 20–25 minutes, flipping halfway, until golden and crispy.
Optional Cooking Methods

Air fryer: 380°F for 12–15 minutes, shaking halfway.

Extra crispy: Spray lightly with cooking oil before baking.
