1 medium head of cabbage, chopped

2 celery stalks, sliced

1 bell pepper, chopped (optional)

1 can (14 oz) diced tomatoes

6 cups vegetable or chicken broth

1 teaspoon dried thyme or Italian seasoning

1 bay leaf

Optional: 1–2 potatoes, diced

Instructions

Sauté aromatics

Heat olive oil in a large pot over medium heat.

Add onion, garlic, carrots, celery, and bell pepper. Sauté 5–7 minutes until softened.

Stir in chopped cabbage and canned tomatoes (with juice).

Add broth & seasonings

Pour in broth, add salt, pepper, thyme, and bay leaf.
