๐ง Beef Enchiladas (Extra Cheese!)
Ingredients

1 lb ground beef

ยฝ small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

ยฝ tsp cumin

ยฝ tsp paprika

Salt & pepper, to taste
Enchiladas
-
8โ10 corn tortillas
-
2 cups enchilada sauce (red or mild)
-
3 cups shredded cheese total (cheddar, Monterey Jack, or Mexican blend)

1ยฝ cups for inside
-
1ยฝ cups for extra-cheesy topping ๐

Optional Toppings

Sour cream
-
Lettuce
-
Tomatoes

Cilantro
Instructions

Preheat oven to 375ยฐF (190ยฐC). Lightly grease a baking dish.

Cook the beef
In a skillet over medium heat, cook ground beef with onion until browned. Drain grease.
Add garlic and spices; cook 1 more minute. -
Soften tortillas
Warm tortillas briefly in a pan or microwave so they donโt crack. -
Assemble

Spread a little enchilada sauce in the bottom of the dish.

Fill each tortilla with beef and a generous sprinkle of cheese.

Roll up and place seam-side down.

EXTRA CHEESE TIME

Pour remaining enchilada sauce over enchiladas.

Cover generously with the rest of the cheese (donโt be shy!).

Bake

Cover with foil and bake 20 minutes.

Uncover and bake 10 more minutes, until cheese is melted and bubbly.

Serve hot
Let cool slightly, then add your favorite toppings.
Extra Cheesy Tips

Mix a little cream cheese into the beef for ultra-creamy filling
