1 sheet puff pastry, thawed

Apple Filling

2 apples (Granny Smith or Honeycrisp), peeled & diced

2 tbsp sugar

1 tbsp brown sugar

1 tsp cinnamon

½ tsp vanilla

1 tsp lemon juice

1 tbsp butter

1 tsp cornstarch (optional, for thickness)
Almond Filling

½ cup almond flour

¼ cup sugar
-
4 tbsp butter, softened
-
1 egg
-
½ tsp almond extract
Topping

Sliced almonds

Powdered sugar glaze (optional)
Instructions

Prep apples: Cook apples, sugars, cinnamon, vanilla, lemon, butter over medium heat 5–7 min until soft. Stir in cornstarch if using. Cool.

Almond cream: Mix butter + sugar until smooth. Beat in egg, almond extract, then almond flour.

Shape pastries: Roll puff pastry slightly, cut into 6–8 squares. Score a border.

Fill: Spread almond cream in center, top with apple filling.

Egg wash edges, sprinkle almonds on top.

Bake at 400°F (200°C) for 18–22 minutes until puffed and golden.

Glaze if desired once slightly cooled.
Simple Glaze (Optional)

½ cup powdered sugar

1–2 tbsp milk or lemon juice
Whisk and drizzle.
