½ tsp dried thyme or parsley (optional)

👩🍳 Instructions

Cook Bacon
In a large pot, cook chopped bacon over medium heat until crisp. Remove bacon and set aside, leaving a little fat in the pot. -
Sauté Vegetables
Add onion, carrots, and celery to the pot; cook 5–6 minutes until softened. -
Add Potatoes & Broth
Stir in potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes, until potatoes are tender. -
Add Cream & Season
Stir in cream, salt, pepper, and thyme. Heat gently (do not boil) until warm. -
Serve
Ladle soup into bowls, sprinkle with cooked bacon and cheese if desired. Serve with crusty bread.
🌟 Tips
-
For a thicker soup, mash some potatoes in the pot before adding cream.
-
Add other vegetables like corn, peas, or green beans for variation.
-
Perfect for warming up after a snowy day or cozying up by the fireplace.
If you want, I can give a vegetarian version, cheesy loaded version, or quick 30-minute version too.
