8 oz dark chocolate (60–70%), finely chopped

¼–½ tsp chili powder or cayenne (to taste)

Instructions

Heat the cream
Warm cream in a small saucepan until just beginning to steam (don’t boil). -
Melt the chocolate
Pour hot cream over the chopped chocolate. Let sit 2 minutes, then stir until smooth. -
Add the heat
Stir in chili powder or cayenne. Start with ¼ tsp and adjust—this should be a slow, warm glow, not a fire alarm. -
Chill
Refrigerate 1–2 hours until firm enough to scoop. -
Roll & serve
