Ingredients
- 1½ cups cooked chicken (poached or roasted, finely shredded)
- 1 cup carrots, peeled & chopped
- 2–3 tbsp cream cheese or mayonnaise (or a mix)
- 1 tbsp butter or olive oil
- 1 small garlic clove (optional)
- Salt & white or black pepper, to taste
- Optional flavor boosts:
- Pinch of nutmeg
- Fresh thyme or parsley
- Squeeze of lemon juice
Instructions
- Cook the carrots
Boil or steam carrots until very soft. Drain well. - Sauté (optional but good)
Lightly sauté garlic in butter or olive oil until fragrant. - Blend
In a food processor, combine chicken, carrots, cream cheese/mayo, garlic, salt, and pepper.
Blend until smooth and spreadable. Add a spoon of warm water or broth if needed. - Season & chill
