2 cups all-purpose flour

1 tsp baking soda

1 tsp cinnamon

¼ tsp nutmeg (optional)

½ cup granulated sugar

½ cup brown sugar

½ cup neutral oil or melted butter

2 eggs

½ cup yogurt or sour cream

1 tsp vanilla

2 cups apples, peeled & diced (Honeycrisp or Granny Smith)
Cinnamon Swirl

⅓ cup brown sugar
-
1½ tsp cinnamon
Optional Topping

2 tbsp coarse sugar or streusel
Method
1. Prep

Preheat oven to 175°C / 350°F.

Grease or line a loaf pan.
2. Mix dry

Whisk flour, baking soda, cinnamon, nutmeg, and salt.
3. Mix wet

In another bowl, whisk sugars, oil/butter, eggs, yogurt, and vanilla.
4. Combine

Fold dry into wet just until combined.

Gently fold in apples.
5. Swirl

Pour half the batter into the pan.

Sprinkle cinnamon swirl mixture.

Add remaining batter and lightly swirl with a knife.

Top with coarse sugar if using.
6. Bake

Bake 50–60 minutes, tent loosely if browning too fast.

Toothpick should come out mostly clean.
7. Cool

Let cool 15 minutes before slicing (hardest step).
