Ooo yes — French Onion Mini Meatloaves 😌
Cozy, savory, and way more exciting than regular meatloaf. Here’s a solid, crowd-pleasing recipe.
French Onion Mini Meatloaves (Serves 4)
Ingredients
Caramelized Onions

2 large onions, thinly sliced

1 tbsp butter
-
1 tbsp olive oil
-
Pinch of salt
-
1 tsp sugar (optional, helps browning)
-
1 tsp fresh thyme (or ½ tsp dried)
Meatloaves
-
500g (1 lb) ground beef (or beef + pork mix)
-
1 egg
-
½ cup breadcrumbs (or panko)
-
¼ cup milk
-
2 tbsp Worcestershire sauce
-
1 tbsp Dijon mustard
-
2 cloves garlic, minced
-
Salt & black pepper
Topping
-
4 slices Gruyère, Swiss, or mozzarella

Extra caramelized onions
Method
1. Caramelize the onions (don’t rush this)

Heat butter + oil in a pan over medium-low.

Add onions and salt. Cook 20–25 minutes, stirring often.

Add sugar (if using) and thyme near the end.

Set aside and try not to eat them all.
2. Make the meat mixture
-
In a large bowl, mix egg, milk, Worcestershire, mustard, garlic, salt, and pepper.

Add breadcrumbs and beef.

Gently fold in half the caramelized onions.
3. Shape & bake

Preheat oven to 190°C (375°F).

Divide mixture into 4 mini loaves.

Place on a lined baking tray or in a muffin tin.

Bake 20–25 minutes.
4. Cheese time
-
Top each loaf with remaining onions + a slice of cheese.

Return to oven 5–8 minutes until melty and golden.
