Cottage Cheese Egg Bites

Ingredients

6 large eggs
-
½ cup cottage cheese (small curd works best)

½ cup shredded cheese (cheddar, Monterey Jack, or Gruyère)

¼ tsp salt
-
¼ tsp black pepper
-
¼ tsp garlic powder (optional)
Optional mix-ins (choose 1–2):

Cooked bacon or sausage, crumbled

Diced ham

Spinach (sautéed & squeezed dry)

Bell peppers or onions (sautéed)

Instructions

Preheat oven to 350°F (175°C). Grease a muffin tin well or use silicone liners.

Blend:
Add eggs, cottage cheese, salt, pepper, and garlic powder to a blender. Blend until completely smooth and fluffy. -
Add mix-ins:
Pour egg mixture into a bowl and stir in shredded cheese and any add-ins. -
Fill:
Divide evenly into muffin cups (about ¾ full). -
Bake:
Bake 20–25 minutes until set and lightly golden. -
Cool:
Let cool 5 minutes before removing.
