Soft, rich, and just sweet enough—this one’s a crowd-pleaser.

1½ cups all-purpose flour
-
¾ cup sugar
-
1½ tsp baking powder
-
½ tsp salt
-
2 eggs
-
½ cup milk (or buttermilk)
-
⅓ cup vegetable oil or melted butter
-
1 tsp vanilla extract
-
1 cup blueberries (fresh or frozen; don’t thaw if frozen)
Cream Cheese Swirl
-
6 oz cream cheese, softened
-
¼ cup sugar
-
1 egg
-
½ tsp vanilla
Instructions
-
Preheat oven to 350°F (175°C). Grease or line a loaf pan.

Make cream cheese layer: Beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.
-
Mix dry ingredients: Flour, sugar, baking powder, and salt.
-
Mix wet ingredients: Eggs, milk, oil, and vanilla.
-
Combine: Stir wet into dry just until mixed. Gently fold in blueberries (toss them in a little flour first to prevent sinking).
-
Layer:
-
Pour half the batter into the pan
-
Add cream cheese mixture
-
Top with remaining batter
-
Swirl lightly with a knife
-
-
Bake 50–60 minutes, until a toothpick comes out mostly clean.
-
Cool at least 20 minutes before slicing (hard part, I know).
Optional upgrades
-
Lemon zest in the batter 🍋
-
Streusel topping for crunch
-
Swap blueberries for raspberries or mixed berries
