Ingredients

1½ lb boneless skinless chicken thighs or breasts, cut into chunks

1 tsp poultry seasoning (or thyme + sage)

2 tbsp butter + 1 tbsp olive oil

1 small onion, diced

2–3 garlic cloves, minced

1 box stuffing mix (chicken or herb)

1½ cups chicken broth

½ cup sour cream or heavy cream

1 cup green beans or broccoli (optional, but nice)

Fresh parsley for garnish
Instructions

Brown the chicken

Season chicken with salt, pepper, and poultry seasoning.

Heat butter + oil in a large skillet over medium-high.

Brown chicken 4–5 minutes until golden (doesn’t need to be fully cooked).
