Breading

½ cup flour

2 eggs, beaten

1 cup breadcrumbs or panko

Instructions

Cook the aromatics

Sauté garlic in a little oil until fragrant.

Add spinach, cook off moisture, cool slightly.

Form into logs or balls.

Roll in flour → egg → breadcrumbs.
