🍤 Mexican Shrimp Cocktail
Ingredients

1 lb shrimp, peeled & deveined

½ cup ketchup

¼ cup fresh lime juice

¼ cup orange juice (optional but traditional)

½ cup tomato juice or Clamato

1 small red onion, finely diced
-
1–2 Roma tomatoes, diced

1 jalapeño, minced (remove seeds for mild)

1 avocado, diced
-
2 tbsp chopped cilantro

Salt & black pepper, to taste

Optional: dash of hot sauce
Instructions

Cook shrimp: Boil in salted water 2–3 minutes until just pink. Drain and cool, then chop into bite-size pieces if large.

Mix the base: In a large bowl, stir together ketchup, lime juice, orange juice, and tomato juice.

Add veggies: Mix in onion, tomatoes, jalapeño, and cilantro.

Fold in shrimp and season with salt, pepper, and hot sauce to taste.

Chill for at least 30 minutes.

Add avocado just before serving.
