Instructions

Soak the fish in buttermilk for 15–30 minutes (helps flavor and tenderness).

Mix coating: In a shallow dish, combine cornmeal, flour, salt, pepper, paprika, garlic powder, and cayenne.

Heat oil in a skillet to about 350°F (175°C)—enough to come halfway up the fillets.

Dredge fillets in the cornmeal mixture, pressing gently so it sticks.

Fry 2–3 minutes per side until golden brown and crispy.

Drain on paper towels or a rack.
