🥔 Fried Potatoes & Onions
Ingredients
-
3–4 medium potatoes (russet or Yukon gold work best)
-
1 medium onion
-
2–3 tbsp oil (vegetable or olive oil)
-
Salt, to taste
-
Black pepper, to taste
-
Optional: garlic powder or paprika
Instructions
-
Prep the potatoes: Wash and slice them into thin rounds or small cubes. Pat dry with a paper towel (this helps them crisp).
-
Slice the onion into thin strips.
-
Heat oil in a large skillet over medium heat.
-
Cook potatoes first: Add potatoes in an even layer. Let them cook without stirring for 4–5 minutes so they brown.
-
Flip and cook another 5 minutes, stirring occasionally, until mostly tender.
-
Add onions and a pinch of salt and pepper.
-
Cook together for 5–8 more minutes, stirring gently, until onions are soft and potatoes are golden and crispy.
-
Season to taste and serve hot.

If you want, I can share a super-crispy diner-style version or a one-pan oven method too.
