Lemon Garlic Chicken Bites
Ingredients (serves 4)

1½ lbs boneless, skinless chicken breasts (or thighs), cut into bite-size pieces

1 tbsp olive oil

Zest of 1 lemon

3 tbsp fresh lemon juice

4 cloves garlic, minced

1 tsp Italian seasoning

½ tsp paprika
-
½ tsp salt

¼ tsp black pepper

2 tbsp butter
-
1 tbsp fresh parsley, chopped
Instructions

Season the chicken
In a bowl, toss chicken with olive oil, lemon zest, lemon juice, garlic, Italian seasoning, paprika, salt, and pepper. -
Cook the chicken
Heat a large skillet over medium-high heat.
Add chicken in a single layer (cook in batches if needed).
Cook 3–4 minutes per side until golden brown and cooked through. -
Make it saucy
Reduce heat to medium-low.
Add butter and let it melt, tossing chicken to coat in the lemon-garlic butter. -
Finish & serve
Sprinkle with fresh parsley and extra lemon zest if desired. Serve hot.
