Ingredients

1 lb (450 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

2 tbsp olive oil (or butter for richer flavor)

4–5 cloves garlic, minced

Zest of 1 lemon

2–3 tbsp fresh lemon juice

1 tsp paprika

½ tsp dried oregano or Italian seasoning

Instructions

Season the chicken
Toss chicken bites with paprika, oregano, salt, and pepper. -
Sear
Heat olive oil in a large skillet over medium-high heat.
Add chicken in a single layer and cook 6–8 minutes, turning occasionally, until golden and cooked through. Remove chicken and set aside. -
Make the sauce
Lower heat to medium. Add garlic to the same pan and sauté for ~30 seconds until fragrant (don’t burn it).
Stir in lemon zest and lemon juice. -
Combine
Return chicken to the pan and toss to coat in the lemon-garlic sauce. Cook 1–2 more minutes. -
