Ingredients

1 lb ground beef

1 small onion, diced

1 packet taco seasoning (or 2 tbsp homemade)

1 (10 oz) can enchilada sauce

1 (10 oz) can Rotel or diced tomatoes with green chiles

1 cup corn (optional)

2 cups shredded Mexican-blend or cheddar cheese

10–12 corn tortillas, torn into pieces

Salt & pepper, to taste
Instructions

Preheat oven to 375°F (190°C).

Brown ground beef with onion; drain excess grease.

Stir in taco seasoning, enchilada sauce, Rotel, and corn. Simmer 3–5 minutes.

Lightly grease a 9×13 baking dish.

Layer: tortillas → beef mixture → cheese. Repeat layers.

Finish with cheese on top.

Cover with foil and bake 20 minutes.
