Balanced, colorful, and great with rice.
Sweet and Sour Beef
Ingredients (serves 2–3)

1 lb (450 g) beef sirloin or flank steak, thinly sliced

1 tbsp soy sauce

1 tbsp cornstarch
-
1 tbsp vegetable oil
Veggies

1 bell pepper (any color), chopped
-
1 small onion, chopped
-
½ cup pineapple chunks (fresh or canned, drained)
Sweet & Sour Sauce
-
¼ cup ketchup
-
2 tbsp rice vinegar (or apple cider vinegar)
-
2 tbsp sugar (or honey)
-
1 tbsp soy sauce
-
¼ cup water
-
1 tsp cornstarch (for thickening)
Instructions

Marinate the beef

Mix beef with soy sauce and cornstarch.

Let sit for 10 minutes.

Make the sauce

Whisk all sauce ingredients in a bowl. Set aside.

Cook the beef

Heat a pan or wok over medium-high heat with oil.

Stir-fry beef for 2–3 minutes until just cooked.

Remove and set aside.

Cook the veggies
-
In the same pan, stir-fry onion and bell pepper for 2 minutes.

Add pineapple and cook 1 minute more.

Combine

Return beef to the pan.

Pour in sauce and stir.

Cook 1–2 minutes until thick and glossy.

Serve

Over steamed rice
