Instructions

Prepare the cheese
Place cheese cubes in a shallow dish or airtight container. -
Make the marinade
Whisk together olive oil, vinegar, pimientos, green onions, garlic, oregano, basil, red pepper flakes, salt, and pepper. -
Marinate
Pour marinade over cheese and gently toss to coat. -
Chill
Cover and refrigerate at least 4 hours, preferably overnight, stirring once or twice. -
Serve
Let sit at room temperature for 15–20 minutes before serving. Serve with toothpicks, crackers, or crusty bread.
