🧀 Beef Enchiladas (Extra Cheese!)
Ingredients
Filling

1 lb ground beef

½ small onion, finely chopped

2 cloves garlic, minced
-
1 tsp chili powder
-
½ tsp cumin
-
½ tsp paprika
-
Salt & pepper, to taste
Enchiladas
-
8–10 corn tortillas
-
2 cups enchilada sauce (red or mild)
-
3 cups shredded cheese total (cheddar, Monterey Jack, or Mexican blend)

1½ cups for inside
-
1½ cups for extra-cheesy topping 😄

Optional Toppings
-
Sour cream
-
Lettuce
-
Tomatoes
-
Cilantro
Instructions

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Cook the beef
In a skillet over medium heat, cook ground beef with onion until browned. Drain grease.
Add garlic and spices; cook 1 more minute. -
Soften tortillas
Warm tortillas briefly in a pan or microwave so they don’t crack. -
Assemble

Spread a little enchilada sauce in the bottom of the dish.

Fill each tortilla with beef and a generous sprinkle of cheese.

Roll up and place seam-side down.

EXTRA CHEESE TIME

Pour remaining enchilada sauce over enchiladas.

Cover generously with the rest of the cheese (don’t be shy!).

Bake

Cover with foil and bake 20 minutes.

Uncover and bake 10 more minutes, until cheese is melted and bubbly.

Serve hot
Let cool slightly, then add your favorite toppings.
Extra Cheesy Tips

Mix a little cream cheese into the beef for ultra-creamy filling

Add cheese between layers if stacking

Broil 1–2 minutes at the end for golden, bubbly cheese (watch closely!)
