Fideo with Potatoes and Ground Beef
Ingredients

1 lb ground beef

2 tbsp oil
-
1 (7β8 oz) package fideo (or vermicelli, broken into short pieces)

2 medium potatoes, peeled and diced small

1 small onion, chopped

2 cloves garlic, minced

2 cups tomato sauce or crushed tomatoes

3β4 cups beef broth (or water + bouillon)

1 tsp cumin
-
1 tsp chili powder
-
Β½ tsp paprika

Salt and pepper, to taste

Optional: bay leaf
Instructions

Brown the beef
In a large pot over medium heat, cook ground beef with onion until beef is browned. Drain excess grease if needed. Add garlic and cook 30 seconds. -
Toast the fideo
Push beef to the side. Add oil, then fideo. Stir frequently until lightly golden (watch closely so it doesnβt burn). -
Add potatoes & seasoning
Stir in diced potatoes, cumin, chili powder, paprika, salt, pepper, and bay leaf (if using). -
Add liquids
Pour in tomato sauce and broth. Stir well. -
Simmer
Bring to a gentle boil, then reduce heat. Cover and simmer 15β20 minutes, stirring occasionally, until potatoes are tender and fideo is soft. -
Adjust & serve
Taste and adjust seasoning. Add more broth if you like it soupier.
