Roasted Beets with Ginger
Ingredients:

2–3 medium beets

1–2 teaspoons fresh ginger, grated

1–2 tablespoons olive oil

Salt (to taste)

Black pepper (optional)
Instructions:

Preheat the oven to 400°F (200°C).

Wash, peel, and cut the beets into small cubes.

Place beets on a baking sheet.

Add grated ginger, olive oil, and a light sprinkle of salt.
