- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2–3 cloves garlic, minced
- 2–3 green chilies (mild or medium), roasted, peeled, and chopped

- 2–3 potatoes, peeled and diced
- 1 tsp ground cumin
- 1 tsp oregano
- Salt & pepper, to taste
- Optional: 1 cup corn or black beans
- Optional garnish: chopped cilantro, shredded cheese, or lime wedges
👩🍳 Instructions
- Brown the meat
Heat oil in a large pot.
Add meat, season with salt and pepper, and brown on all sides. Remove and set aside. - Sauté aromatics
In the same pot, sauté onion and garlic until soft. Add cumin and oregano and cook 30 seconds until fragrant. - Add chilies & broth
Stir in chopped green chilies and return the meat to the pot. Pour in broth. - Simmer
Bring to a boil, then reduce heat to a simmer. Cover and cook 45–60 minutes, until meat is tender. - Add potatoes & optional veggies
Add diced potatoes (and corn or beans if using). Simmer another 20–25 minutes until potatoes are tender. - Finish & serve
Adjust salt and pepper. Serve hot with cilantro, cheese, or lime wedges if desired.
🌟 Tips
- Roasting the chilies first adds smoky flavor.
- This stew tastes even better the next day.
- For extra heat, leave some chili seeds in or add a pinch of chili powder.
